with local suppliers and artisans for more than 125 years.

We defend the work of casquería as a gastronomic value, as well as sustainable cuisine; we design our spaces with environmentally friendly materials; and we work knowing that the effort and commitment to the kitchen and the environment, also influences the future of people and the life of Ezcaray.

NATURE´S PACE

Both at Echaurren Tradición and El Portal de Echaurren we feel linked to the territory, and we always work with what the season offers us.

White asparagus appears on our menus at the end of March, and will remain with us until mid-June, depending on the circumstances, always respecting nature’s timing.

Going to pick asparagus for a few hours connects us with the product and makes us consciously value the work behind each preparation.

VEGETABLE TREASURES

Very close to Ezcaray, Alfredo grows vegetables and sprouts.

Authentic vegetable treasures that, depending on the season, we come to select with him.
These are unique products, not at all standardized, which allow us to maintain with him a very valuable bond and trust.

Because our suppliers are the first cooks in our house.

AN AUDACIOUS PRODUCT

We like brave suppliers and Goyo is certainly one of them.
Together with his family, he feeds and raises his oxen in Pradilla, in the province of Burgos.

To innovate, they raise animals that are a mix of native breed and wagyu.

COMMITED WITH THE RURAL AREA

The Ciloria cheese dairy in Zorraquino has contributed immensely to the sustainability of our region.

This type of livestock farms are a treasure for the valley. They become the best forestry agents we could have for our forests, eating fruits, small branches, and maintaining life in the villages and mountain environments.

Our commitment to them goes beyond receiving a quality product, it goes with the pure sustainability of our rural environment.
